   It seems to me that to beat Google on search for real users you have
   to be consistently better for long enough that the brand recognition
   starts to erode.  That could certainly happen, but it's particularly
   hard to do with free software because it's very easy for Google to
   simply incorporate the ideas.

Never underestimate the power of stupid people in large groups.  With
a tight estimate you get a nice lower bound on the power of smart
people in large groups.  If this Open thing is large enough, Google
would have a hard time keeping up due to the sheer volume of
community-based innovation.
